Rainbow Breakfast


  • spiralized sweet potato
  • ghee
  • Trader Joe's cruciferous crunch (kale, brussles sprouts, broccoli, green and red cabbage)
  • 1 organic chicken sausage, diced
  • pea shoots (optional)
  • pastured egg
  • garlic salt, pepper

In a saute pan, melt the ghee and add the sweet potatoes. Leave them alone for about 5 minutes to brown, then flip. Add cruciferous crunch, sausage, and seasonings. Once browned, set aside and fry the egg. Top the veggies with the egg and add pea shoots.
