TJ's Breakfast Bomb

Ingredients:

  • leftover roasted diced sweet potatoes and jalapenos
  • Cruciferous crunch (Trader Joe's - kale, broccoli, red and green cabbage)
  • frozen leeks (Trader Joes)
  • 1 organic chicken sausage, diced
  • 2 pastured eggs
  • pork belly (pre-cooked, from TJ's. I sliced it thin)
  • 1/2 T. - 1 T. cooking fat (I used red palm oil)
  • garlic salt (Trader Joe's)
  • pepper
  • pea shoots (optional)

mix everything but the eggs together in a saute pan over medium-high heat. Cook until slightly browned, then set aside and fry the eggs. Place the eggs on top and add pea shoots.
